Bannock tacos and Three-Sisters Soup are being served at a new pop-up restaurant at the Notre Dame campus of Red River College.

The campus’s first short-term restaurant that features daily Indigenous specials will open today. Students will make breakfast and lunch until April 17, working within the Prairie Lights restaurant.

“I’m excited for everyone to have a taste. Everyone keeps asking to try our food, so here’s your chance to try our food,” student Alexa Raven said.

She’s one of 10 students who will cook in the restaurant, transitioning the skills learned in class. One of their specialties, Three-Sisters Soup, is a spiced purée of butternut squash with white beans, roasted corn and popped Manitoba wild rice.

“I want to be fast and learn how to work the line better. This is my first time, so I want to know each station, what I need to do and how I need to prepare for it each day,” Raven said.
